Jalapeno Pepper Pickle Recipe
Note: If you are unfamiliar with canning procedures, you should read Pickling Techniques before beginning.
Ingredients:
* jalapeno peppers
* 1 clove of garlic per jar
* 1 sprig of cilantro per jar
* white vinegar, amount sufficient to fill each of the jars
* 1/2 teaspoon pickling salt per quart of vinegar used
Directions:
1. Wash peppers; drain well and let dry; Prick skins in a few places.
2. Into each sterilized jar, place a clove of garlic and a sprig of cilantro.
3. Pack the washed peppers into the jars leaving 1/2 inch head space.
4. Combine vinegar and salt in a large pot and bring to a boil.
5. Fill the jars with boiling vinegar mix to 1/2 inch of top of jar, making sure peppers are covered.
6. Adjust the lids and process in a boiling water bath for 10 minutes.
