Pickled Green Beans Recipe
Ingredients:
* 4 pounds whole green beans
* crushed red pepper, 1/4 teaspoon per pint jar
* mustard seed, 1/2 teaspoon per pint jar
* dill seed, 1/2 teaspoon per pint jar
* garlic, 1 small clove per pint jar
* 5 cups vinegar
* 5 cups water
* 1/2 cup pickling salt
Directions:
1. Trim and wash beans well; drain and cut into lengths to fill pint jars.
2. Pack beans into sterilized, hot jars; add crushed red pepper, mustard seed, dill seed, and garlic per instructions in "Ingredients" above.
3. Combine vinegar, water, and salt in large non-reactive pot (do not use copper, brass, galvanized or iron).
4. Heat to boiling. Pour boiling liquid over beans, filling to 1/2 inch of top of jar. Adjust jar lids.
5. Process in boiling water bath for 5 minutes (10 minutes for altitudes over 1000 feet.)
