Corn Relish Recipe
Ingredients:
* 1 quart fresh corn kernels
* 5 cups chopped green bell peppers
* 2 cups chopped onion
* 2 cups coarsely chopped unpeeled cucumber
* 4 cups chopped red ripe tomatoes
* 4 cups vinegar
* 2 cups sugar
* 1/4 cup pickling salt
* 1 tablespoon turmeric
* 1 tablespoon mustard seed
Directions:
1. Combine all ingredients in a large kettle.
2. Heat to boiling, simmer 25 minutes or until the vegetables are tender.
3. Fill hot, sterilized canning jars with the vegetables leaving 1/2 inch head space.
4. Fill jars to within 1/2 inch of top with the boiling liquid from the pot.
5. Seal with sterilized lids and process for 15 minutes in a boiling-water bath (20 minutes for altitudes over 1000 feet).
Makes about six pints
