Basic Brine Recipe for Pickling
This recipe is for a basic pickling brine that may be used with a variety of vegetables. After making the brine you can add dill weed to your canning jars with cucumbers and have dill pickles. Use the same brine recipe and add garlic and jalapeno peppers to each jar and you have hot, garlic, dill pickles. Or...just add bread and butter pickling spices and you have bread and butter pickles. In other words you can use this same basic brine recipe and make whatever pickle you want. You are only limited by your own imagination. Basic Brine Ingredients
* 1/4 cup sugar
* 1/2 cup pickling salt
* 12 cups water
* 4 cups vinegar
Directions
Combine all ingredients in a large pot and bring to a boil. Reduce heat and simmer until used.
Notes:
1. As mentioned earlier, this is a basic brine that may be used with a variety of vegetables. Therefore, the yield of the brine recipe will vary greatly according to what vegetables and other ingredients you are pickling. You may use small gherkins or large slicing cucumbers. You can use whole cucumbers or sliced. You may want to pickle asparagus, carrot sticks, onions, green beans, cauliflower or whatever. The point being the number of jars this recipe will yield is determined by what you are pickling.
2. In light of the above, should you need more brine you should make a full batch. The ingredients for brine are relatively inexpensive and it is quick and easy to make so any unused brine should not be a large concern. For safety, we do not recommend altering the salt/vinegar proportions by making partial batches.
